Your multi-column sort should be saved as long as you have edit access to the sheet.

No, the sorting will affect everything. The idea with this guide is that you want to sort by a single column first, then by another column. The whole dataset is sorted, not just the column.

Wow, that would be a disaster for a large spreadsheet. How would you ever get it back to the original state?

The sort will save to the sheet, so if you shared the sheet it should be the same for all viewers.
